Last weekend, my boyfriend picked up dinner at a local market which included stuffed chicken and a rice salad. The rice salad was so good that I licked my plate clean. Ever get takeout and you’re just not satisfied with it, and you think “I totally could have made this better.” Instead of painfully eating it up or tossing it to the curb, put your own little spin on it! That’s what I did with my Chinese takeout last weekend. What I imagined: A vibrant, flavorful, spicy dish filled with assorted meats and veggies – a dish worthy of the carbs. What I got: A dull, bland box of noodles and some meat; lacking flavor and spice. It was NOT what I wanted, especially when I was starving and gave in to a carby meal. I’m taking this week a little lighter than usual, handing off half of the cooking to my boyfriend! In light of that, why not make dinner a little more simplistic when I can? As most of you may know, I love tomato soup. Whether it’s -10 degrees or 90 degrees out, tomato soup is always appropriate. I have this awesome recipe for creamy tomato basil soup I love whipping up but let’s be lazy tonight.As much as I don’t like most cheese out there, I do crave a good grilled cheese every now and then. Weird, I know. Forget the cheddar or whatever other cheese is normally used. Let’s put a little spin on this. Who says a grilled cheese can’t be fancy? It’s beginning to look a lot like springtime which means it’s time to bid adieu to Old Man Winter and hopefully prevent his return, at least for a while! So, what am I most excited for besides the warm weather, fresh flowers and opportunities for outdoor shenanigans?
