Mini Strawberry Cheesecake Bites

On the count of three, name your favorite dessert: ONE… TWO… THREE… CHEESECAKE! Okay, I’m not exaggerating when I say that I can take on an entire cheesecake to myself. I can’t promise you that I wouldn’t experience a terrible stomach ache after but it can be done. I’ve had such a sweet tooth lately and it’s been driving me crazy! I find myself scrounging the home for any little thing to satisfy my craving, or contemplating running to the store for a pint of ice cream. Sugar deprivation, maybe? Luckily, I made these tasty Mini Strawberry Cheesecake Bites and they’re the perfect little treat.

Quinoa Lentil Salad

Last weekend, my boyfriend picked up dinner at a local market which included stuffed chicken and a rice salad. The rice salad was so good that I licked my plate clean. He threw the container away before I had a chance to read the ingredients label so I was left with nothing but the reminiscent taste. As spring is slowly unfolding, light dishes and refreshing flavors are all the craze – at least in my household! The light, fluffy texture of quinoa with textured lentils is the perfect combination. That said, I made a BIG batch of Quinoa Lentil Salad tossed in a red pepper sundried tomato dressing. Can I get a round of applause because this dish was a smashing success! Good thing I made a little extra… love having leftovers for lunch. March Birchbox Review

It’s that time of the month again! Look what the mailman dropped off to me – a box fit for a beauty babe. The first thing I noticed was the playful spring prints on this month’s Birchbox. Too bad my reaction to what was inside wasn’t as pretty as the outside. There’s always a 50/50 chance to whether or not the curated box will be a hit or miss. Repurposed Lo Mein

Ever get takeout and you’re just not satisfied with it, and you think “I totally could have made this better.” Instead of painfully eating it up or tossing it to the curb, put your own little spin on it! That’s what I did with my Chinese takeout last weekend. What I imagined: A vibrant, flavorful, spicy dish filled with assorted meats and veggies – a dish worthy of the carbs. What I got: A dull, bland box of noodles and some meat; lacking flavor and spice. It was NOT what I wanted, especially when I was starving and gave in to a carby meal. This is what happens when you deviate from your go-to choice, haha. I chose the house deluxe lo mein with the trifecta of meat: chicken, shrimp and beef over my usual Szechuan chicken. Bad idea. Spinach, Feta, Sundried Tomato, Avocado Grilled Cheese

I’m taking this week a little lighter than usual, handing off half of the cooking to my boyfriend! In light of that, why not make dinner a little more simplistic when I can? As most of you may know, I love tomato soup. Whether it’s -10 degrees or 90 degrees out, tomato soup is always appropriate. I have this awesome recipe for creamy tomato basil soup I love whipping up but let’s be lazy tonight.As much as I don’t like most cheese out there, I do crave a good grilled cheese every now and then. Weird, I know. Forget the cheddar or whatever other cheese is normally used. Let’s put a little spin on this. Who says a grilled cheese can’t be fancy? Get that griddle pan ready because once you take a bite of this Spinach, Feta, Sundried Tomato, Avocado Grilled Cheese – you’ll be in grilled cheese heaven.

Happy first day of spring! Although it may not be as warm as I’d hope, I’m still in full bloom in the wardrobe department. I can’t tell you how excited I was to break out the florals and accents of pastel. The Spring Look

It’s beginning to look a lot like springtime which means it’s time to bid adieu to Old Man Winter and hopefully prevent his return, at least for a while! So, what am I most excited for besides the warm weather, fresh flowers and opportunities for outdoor shenanigans? I’m ready to pack away my heavy parka, tall boots and bulky sweaters and break out my light jacket, strappy sandals and abundance of shorts and lace!

Sausage & Quinoa Stuffed Peppers

With St. Patrick’s Day this past Tuesday, I saw some Irish-inspired ingredients at the grocery store such as Luck of the Irish O’ Garlic Italian Sausages. One of my favorite meals to make with sausage is stuffed peppers. What do I love most about stuffed peppers? I love that it can be “stuffed” with anything – from grains to meat to veggies – it’s really all up to you and your appetite!
