Stuffed peppers have always been one of my favorites – a little rice, sausage, spice, and a whole lot of flavor! Such a well-balanced meal. If it wasn’t already tasty as ever, can you imagine it undone and say, in a bowl? Yeah, yeah, yeah – this is what dreams are made of. I’ve had quite the taste for stuffed peppers lately and satisfied my craving in a delightful way: soup.

Okay, having a yoga and/or medicine ball and a workout mat wouldn’t hurt either! I’m on a daily workout routine that’s working great for me; yes, it is in the gym. And yes, I do love the gym. It’s been a little over a week since I’ve been back from my San Francisco trip and I’m just now getting acquainted to my regular routine. Looking for a quick and easy dinner that will be on the table in less than 25 minutes? It’s possible! I was on a mission one night reorganizing my entire closet in order to maximize my closet space. Little did I know that it was going on 8pm! I was in a time crunch and had to get something on the table, ASAP! Okay, so near the end of the week, my fridge is diminishing in ingredients so I had to a) be creative & b) act fast. 1 avocado… a bag of chicken… some leftover grape tomatoes… and pasta. Hmm… Chicken avocado linguine with roasted grape tomatoes? Sounds like a plan.

If I could prance around in a puffy tulle skirt and classic pumps wherever I went without the public giving me strange looks, then I’d be more than satisfied. I’m feeling a guilty pleasure for dinner tonight, and no, it’s not something sweet! Sausage + pasta = trouble… double trouble. Every now and then, I feel I deserve to indulge in a sweet, spicy and savory dish. This isn’t just any plate of pasta, it’s Spicy Sausage Cacciatore! I initially planned to use chicken as my protein but I had a package of hot Italian sausage in my fridge, so why not. Okay, so I cheated just a little. Instead of making a sauce from crushed tomatoes, I opted the jarred sauce instead. Don’t judge me.
