Happy Monday, all! I’m so excited for a short work week and a long weekend! I hope everyone has fun plans for the fourth; I’ll be heading a little more west than planned… to Chicago! Woo! I may be getting ahead of myself but I’ve got to keep my eye on the prize.
Happy Fish Friday! It’s a salmon kind of day, and I won’t take no for an answer. Never hurts to get an extra dose of omega-3s, right? Nobody wants to slave away in the kitchen on a Friday night, so I’m making this a quick one! This Parmesan Crusted Salmon takes literally 15 minutes to make, total; and the Pesto Cheese Bread… 5 minutes.
Let me just start by saying how obsessed I am with this skirt – and how thankful I am for there to be an occasion for me to break it out! This is totally my ‘Carrie Bradshaw’ skirt, as mentioned before. With a dash of sass and a whole lot of flirty feels, I’d say this is one of my favorite looks.
Lately, I’ve had a sudden craving for carbs (story of my life) and I just couldn’t fight it any longer. On top of that, I’ve been craving something ooey and gooey (what?)… yeah. You can only resist your body’s temptations for so long until you finally give in. Yep… TOTALLY FEELIN’ THAT WAY. So, what better way to kick those cravings to the curb than with a toasted and flavorful Chicken Pesto Panini?
This past weekend has been filled with good food and great company – of course, to celebrate my darling boyfriend’s 25th birthday! As much as I love planning the fun, picking out the perfect date night outfit is almost as important as nailing the reservations and gift. I envisioned something bold and show stopping, yet causal enough for a day-date and lunch.

I’m telling you, who needs delivery when there’s a quick and healthy alternative that can be made right in the kitchen?! I once made BBQ Chicken Naan Pizza (which was a hit) and now I’m venturing again with another personal favorite: Spinach Artichoke, and then some!
Going meatless today? So I am! I’m a big fan of tofu and love to use it in place of beef, chicken – you name it – every once in a while.
Last month, my boyfriend and I took a day trip to the west side of Michigan: Saugatuck. We did a little beaching, hiking, exploring and eating! What a beautiful site to see – here are a few snapshots from my adventures.
