Happy October, everyone! Seriously, how are we already three-quarters into the year? I have a confession to make… I still haven’t had a pumpkin spice latte yet. Eeeek, around this time last year I was sipping on one every day and buying everything pumpkin off the shelves. I made sure to grab cans and cans of pumpkin while at the grocery store earlier this week. Every aspect of fall (and fall flavors) excites me! And, don’t even get me started on the cider mill…. fingers crossed it makes the agenda this weekend.
Last weekend, I finally made a trip to the Eastern Market in Detroit. So glad my friend asked me to go with her or else my fridge wouldn’t have been stocked with SO much fresh produce. Literally, I got a basket of tomatoes for $3 and have been using it almost everything! I also got two pints of delicious subtly sweet blueberries. Mmmm. I wanted to use them up before they stared to go bad, so thought it was time to bake something! And then I glance over at two sad, and very ripe, looking bananas. Do you see where I’m going with this?
Chocolate cravings are serious and should not be ignored. I was itching for something delectable today; something that would satisfy that awful sweet treat craving. I was actually very close to running to Cold Stone last night to get some ice cream. Instead, I went to bed thinking I’d forget about it in the morning. Ugh, fail. As I sat in my kitchen scrounging the cupboards for anything that would resemble a dessert, I saw three lonely ripe bananas sitting on the counter, along with chocolate chip morsels and shredded coconut in the cupboard. Hmmm… an idea started brewing in my head…
Happy Monday, all! I’m so excited for a short work week and a long weekend! I hope everyone has fun plans for the fourth; I’ll be heading a little more west than planned… to Chicago! Woo! I may be getting ahead of myself but I’ve got to keep my eye on the prize.

Ever since I was young, I LOVED any type of apple dessert. Apple pie, crisp, muffins, bars — you name it. Anytime my family and I would go to Pepperidge Farm or Arby’s, I wouldn’t leave without an apple turnover! Yes, I ate my little heart out.Puffy pastry sheets are one of the most genius things ever invented. They’re so versatile and nice & fluffy! I had two apples sitting in my fruit bowl for the past week anticipating to make apple turnovers; I figure I needed to stop being lazy and get these bad boys made… before my apples went bad.
This Fat Tuesday, I will not be indulging in any type of jelly filled Paczki. Instead, I’ll be digging in to a Fudgy Peanut Butter Banana Bread Bite! Treat yourself to something sweet without undoing your entire day, or feeling guilty afterwards. I was planning on making banana bread today since I just so happened to have a browning banana sitting in my fruit bowl, but these are ten times better.I made a few minor adjustments to the original recipe that I went off of to accommodate to what I had on hand and what worked with that. Since these are bite size, I think I’ll have another.
After a long week, nothing seems more rewarding than a warm, delectable treat. Unfortunately, the Fudgy Peanut Butter Banana Bread Bites from earlier this week have magically disappeared aka they were demolished. I sat in my apartment lat night and my sweet tooth started to kick in. At 11pm, what was I going to do? Just like before, one lonely banana sat in the fruit bowl. Banana, that could create something healthy, right? That was a start! I rummaged through my pantry and found quick oats, chocolate chips and about 1/4 cup of plain Greek yogurt left in the fridge. Aha — that’s when it hit me: Chocolate Chip Banana Oat Muffins! Seriously, I think I just created a very hot commodity in this household. Not overly sweet with just the right amount of chocolate morsels to give you a quick fix.
I’ve had a terrible sweet tooth lately and have been making desserts left and right. All of my choices seem to be somewhat on the healthy track… desserts, healthy — can I say that? I picked up some dark chocolate morsels earlier this week anticipating to recreate my favorite chocolate treat: Reese’s Peanut Butter Cups. As the week went on, I thought more and more about it…
