Sometimes you’re just over the entire day, and all you really want to do is go home and indulge; am I right? I’ve been getting that feeling a lot lately. I’ve also been eating a lot of pasta lately, too! So, Lasagna isn’t really one of my go-tos… not really a favorite of mine. But this creamy lasagna soup seriously hit it out of the ball park! I don’t think I’ll ever make layered lasagna ever again. But really…
This weekend took a toll on my body – from food to festivities! Yeah… pizza, jalapeño poppers, hash browns, and ice cream – among many others! That said, I truly had a lazy Sunday filled with a lot of lounging around and cooking up a nice blend of flavors in the kitchen. But instead of slaving away all day, I went with one of my favorite Sunday bites: soup.
To say that the past couple weeks have been hectic is an absolute understatement! My boyfriend and I are officially settled into our new place and I couldn’t be happier with it. I also now have my own personal nook – perfect for work, blogging and you know, all that good stuff. Let me tell you, I’m so ecstatic to be back in the kitchen cooking some healthy, hearty meals rather than opting for the takeout menu… which we have been doing lately. It’s taken some time to get back on routine but this weekend definitely pulled it all together.
Stuffed peppers have always been one of my favorites – a little rice, sausage, spice, and a whole lot of flavor! Such a well-balanced meal. If it wasn’t already tasty as ever, can you imagine it undone and say, in a bowl? Yeah, yeah, yeah – this is what dreams are made of. I’ve had quite the taste for stuffed peppers lately and satisfied my craving in a delightful way: soup.
Just when I was getting use to the slight warm up in temperature, it drops back down to the 40s today.Brrr. My birthday is tomorrow and I know exactly what I’m going to wish for… However, with spring on the horizon I’m pretty hopeful that the sunshine and warm weather is on its way; I do live in Michigan though so it’s a heads or tails kind of game.After an indulgent weekend fill with cupcakes, cookies and an entire ice cream cake — it’s about time I get myself back on track. Little did I know a sneaky little Leprechaun was going to pay a visit at work and stock the lounge with an array of desserts! Yep, and I’m guilty for snagging a few. So tonight, nothing sounds better than a warm, comforting bowl of Sweet Potato Soup! Filled with a ton of veggies, I do not feel one ounce of guilt indulging in a bowl or two.
Sundays are meant for relaxing and getting things done, and that’s exactly what I’ve been doing today. The whole time change has me going at full speed today, not only did a prepare a delicious brunch but I’ve done four loads of laundry and tidied up my entire apartment. To unwind, a crock pot meal fits perfectly. I used some veggies I had in fridge and items from the pantry to make this delicious Creamy Chicken Broccoli dish over brown rice.
Okay, it’s official: the cold is here to stay… for the next couple of months, at least. So, what’s the best way to warm up? If you said a big bowl of soup, you’re right!I don’t know anybody (okay, maybe a few) who doesn’t love French Onion Soup — and even better when paired with a French Onion Chicken Crostini. This meal left me comfy and cozy, and warm from the inside out. I chose to serve my soup with a slice of cheesy, crunchy bread over the typical ‘big chunk of melted cheese’ because first, I’m not a huge cheese fan; second, you can still get the cheese WITH a bite of crunch! Okay, and it looks nice presentation-wise.
Just when I thought we were getting a “warm up” in temperature, meaning 30 degrees, old man winter is back at it again. Can you guess what i made for dinner tonight? Yep, you got it: soup. Not just any kind of soup, though, one that is warm, comforting and filled with all of the veggie goodness you’d want. Bet you’d never guess it was made from cauliflower if I didn’t tell you! I’m a sneaky one. It resembles a hearty potato soup!
Happy Groundhog day — I’m sure Punxsutawney Phil is snowed in today… This snow and cold weather is getting old! So today I’m working from my home office with my slippers on and chai tea in my giraffe mug. It’s always a joy to be able to work so comfortably, and good thing I have an easy dinner to prepare today, too. It’s another crock pot wonder today: Chicken Tortilla Soup. The only con about working from home while having a crock pot recipe cooking alongside me is the teasing temptation that lingers in the air as it cooks!
Saturdays are meant for lounging around and kicking your feet up on the couch, or running errands all across town. For me, it’s been a day of rest and relaxation. What better way to start the day than with a fruit & greek yogurt parfait while rewatching the entire seasons of Gossip Girl on Netflix? I’ll hold as you think of an answer 🙂 Brunch for 1, anyone? I layered some Yoplait Greek yogurt and Bear Naked triple berry granola all in a little goblet and watched as B and S plotted their next scheme against each other… season 1. Let the games begin!
