To say that the past couple weeks have been hectic is an absolute understatement! My boyfriend and I are officially settled into our new place and I couldn’t be happier with it. I also now have my own personal nook – perfect for work, blogging and you know, all that good stuff. Let me tell you, I’m so ecstatic to be back in the kitchen cooking some healthy, hearty meals rather than opting for the takeout menu… which we have been doing lately. It’s taken some time to get back on routine but this weekend definitely pulled it all together.
During any family event, my dad is dubbed the king of the kitchen. Most famous for his fall-off-the-bone ribs and BBQ glazed chicken, it’s nostalgic just thinking about it! Okay, and it’s homemade BBQ sauce, too, which makes it even better. I sat in my living room on day debating on whether or not it would be a good idea to go out for dinner since the fridge and cupboards were far from replenished.

‘Tis the season for light, refreshing meals – I guess that calls for a little crunch, tang and protein! It’s been a little over a week since I’ve been back from my San Francisco trip and I’m just now getting acquainted to my regular routine. That includes some good ole home cooking and quality time in the kitchen! My body needs a little cleanse from the indulgent treats I’ve had, so this lemon asparagus chicken definitely hits the spot.
Looking for a quick and easy dinner that will be on the table in less than 25 minutes? It’s possible! I was on a mission one night reorganizing my entire closet in order to maximize my closet space. Little did I know that it was going on 8pm! I was in a time crunch and had to get something on the table, ASAP! Okay, so near the end of the week, my fridge is diminishing in ingredients so I had to a) be creative & b) act fast. 1 avocado… a bag of chicken… some leftover grape tomatoes… and pasta. Hmm… Chicken avocado linguine with roasted grape tomatoes? Sounds like a plan.
On the last night before I take off to San Francisco for 6 days, I thought I’d fix up a tasty dinner for my boyfriend to remember me by while I’m gone! Unfortunately, I didn’t have much to work with. Sometimes, just sometimes, that’s the best scenario — scrounging the cupboards for potential ingredients, I found a bag of coconut flakes from when I made coconut shrimp. Coconut… chicken… DING DING DING… we have a winner!
Spring is totally in the air, I can smell it from here! Wait, or is it the delicious scent of Honey Lemon Asparagus Chicken coming from my kitchen?
