I don’t know about you, but creamy + any type of pasta is an absolute indulgence on a frigid cold night. The temperatures have been climbing down the ladder lately, and it leaves me wanting to curl up in a pile of blankets… and do nothing. Unfortunately, it’s back to reality! The past two days have been moving in slow motion so the last thing I wanted to do was slave away in the kitchen. Luckily, this Creamy Mushroom Alfredo comes together pretty quickly; and effortlessly, I might add.
Sometimes you’re just over the entire day, and all you really want to do is go home and indulge; am I right? I’ve been getting that feeling a lot lately. I’ve also been eating a lot of pasta lately, too! So, Lasagna isn’t really one of my go-tos… not really a favorite of mine. But this creamy lasagna soup seriously hit it out of the ball park! I don’t think I’ll ever make layered lasagna ever again. But really…
Wow, first let me say that I sincerely apologize for being M.I.A. for the past couple of weeks! Seriously though, the holidays have been in and out and back in again like crazy. Post Thanksgiving dinner, my cousin, brother and I rampaged out and about to get some Black Friday steals… and I’m pretty happy with my purchases! Since then, I’ve been spending like crazy for the upcoming holiday season. But even more, I’ve been running around like a little elf and wrapping presents like I have my own workshop. Luckily, I’ve still had some time to make a delicious meal.
So, you know what happened today? It snowed. Okay, light drizzle of snow or sleet – but I’m still considering it snow. WHY? Does that mean that winter is upon us? Not a happy camper over here… The other day I made this super warm, comforting and yummy veggie quinoa bake that just hunkered in my stomach like my body is with blankets right now! With the week I’ve had, a super easy casserole dish was on the top of my list. A colorful dish is always my favorite dish because that means it’s loaded with veggies (my favorite). And, green is totally the way to go!
This weekend took a toll on my body – from food to festivities! Yeah… pizza, jalapeño poppers, hash browns, and ice cream – among many others! That said, I truly had a lazy Sunday filled with a lot of lounging around and cooking up a nice blend of flavors in the kitchen. But instead of slaving away all day, I went with one of my favorite Sunday bites: soup.
To say that the past couple weeks have been hectic is an absolute understatement! My boyfriend and I are officially settled into our new place and I couldn’t be happier with it. I also now have my own personal nook – perfect for work, blogging and you know, all that good stuff. Let me tell you, I’m so ecstatic to be back in the kitchen cooking some healthy, hearty meals rather than opting for the takeout menu… which we have been doing lately. It’s taken some time to get back on routine but this weekend definitely pulled it all together.
Last weekend, I finally made a trip to the Eastern Market in Detroit. So glad my friend asked me to go with her or else my fridge wouldn’t have been stocked with SO much fresh produce. Literally, I got a basket of tomatoes for $3 and have been using it almost everything! I also got two pints of delicious subtly sweet blueberries. Mmmm. I wanted to use them up before they stared to go bad, so thought it was time to bake something! And then I glance over at two sad, and very ripe, looking bananas. Do you see where I’m going with this?
Lately, I’ve had a sudden craving for carbs (story of my life) and I just couldn’t fight it any longer. On top of that, I’ve been craving something ooey and gooey (what?)… yeah. You can only resist your body’s temptations for so long until you finally give in. Yep… TOTALLY FEELIN’ THAT WAY. So, what better way to kick those cravings to the curb than with a toasted and flavorful Chicken Pesto Panini?
7 ingredients + 7 minutes = 1 delightful piece of heaven. Yes, I am talking about this mouth-watering delicious pizza pie! I’m telling you, who needs delivery when there’s a quick and healthy alternative that can be made right in the kitchen?! I once made BBQ Chicken Naan Pizza (which was a hit) and now I’m venturing again with another personal favorite: Spinach Artichoke, and then some!
Going meatless today? So I am! I’m a big fan of tofu and love to use it in place of beef, chicken – you name it – every once in a while.
